I remember last having had Auntie Mae’s sushi rice during a family gathering in 2009. My daughter and her cousin had little adventures that day — taking a paddle boat out (and needing a tow back when the chain broke!) and feeding goats. It’s one of those sweet days I’ll always remember — and Auntie Mae’s sushi rice made it even more special.

Ingredients:
- Pea pods (shelled)
- 1 egg (beaten and cooked into a thin omelet, then sliced thinly)
- 1–2 carrots (shredded)
- Imitation crab (sliced thin)
- Sushi rice (prepared according to package instructions)
- Sushi Taro (Nagatanien brand) Seasoning Mix for Sushi Rice
Instructions:
- Prepare the sushi rice according to the package directions.
- While the rice is cooking, shell the pea pods.
- Beat the egg, cook it into a thin omelet in a pan, and slice it into thin strips.
- Shred the carrots and slice the imitation crab into thin pieces.
- Once the rice is ready, mix it with the Sushi Taro seasoning mix according to the package instructions.
- Gently fold in the pea pods, sliced egg strips, shredded carrots, and imitation crab.
- Serve warm or at room temperature.

Jodi, thanks for this great recipe! I’m copying it out. The second I saw the image and the recipe title, I knew I would love this recipe. I was going to ask where to get the Nagatanien sushi rice seasoning, but then I cleverly clicked the link. Now I know I can get it from Amazon if not locally. I’m in Phoenix, AZ, and we have a large Asian population. So I may be able to get it in the market up the block. Your paddle boat ride looks great.
