Berry Lemon Ginger Balsamic Vinaigrette – Blender-Ready in Seconds

Berry Lemon Ginger Vinaigrette

When your smoothie fills the cup but you have leftovers, don’t toss the extra — turn it into this bold, tangy vinaigrette. It’s a quick way to stretch your ingredients and make a flavorful, no-waste salad dressing with zero effort.
 

Ingredients:

  • 1/4 cup Berry Lemon Ginger Green Smoothie (it was left over from what didn’t fit in the cup)
  • 1 Tablespoon olive oil
  • 2 Tablespoons balsamic vinaigrette
  • 1 heaping teaspoon Dijon mustard

 

Instructions:

  • Add everything to your Vitamix and blend for a few seconds until smooth. Done.
  • Taste and adjust if needed — more Dijon for bite or balsamic for sweetness.
  • Use right away or refrigerate for up to 2 days.

 

Serving Suggestion:
Drizzle over a salad of spring mix + arugula + a handful of fresh blackberries, topped with a handful of pumpkin seeds. The fruit, citrus, and ginger in the vinaigrette balance beautifully with the greens.
