King Ranch Chicken

Ingredients
  

  • 1 cup diced onion
  • 1 cup diced green pepper
  • 1/2 pound mushrooms
  • 1/4 cup butter
  • 1 can Cream of Mushroom soup
  • 1 can Cream of Chicken soup
  • 1 pound cheddar cheese (grated)
  • 2 cups chicken (cooked & diced)
  • 1 can tomatoes & green chiles (such as Rotel)
  • 1 clove garlic (crushed)
  • 2 Tablespoons chili powder
  • 1 Tablespoon chicken broth
  • 1 8 oz package corn tortillas

Instructions
 

  • Saute onion, green pepper, and mushrooms in butter.
  • Add soups, tomatoes, garlic, chili powder, and chicken broth.
  • Line bottom of large casserole with half of corn tortillas that have been quartered.
  • Top with half of sauce, then half of chicken and half of cheese.
  • Repeat layers.
  • Bake at 350ºF for 30 minutes.
