Strawberry Poppyseed Salad with Avocado – Panera-Inspired (Vegan)
This Strawberry Poppyseed Salad with Avocado is a fresh, vegan twist on a Panera classic. I swapped the chicken for creamy avocado – no extra charge – and it’s still packed with flavor. Perfect for a light, refreshing meal.

Ingredients:

  • Romaine
  • Iceberg Lettuce
  • Strawberries, sliced
  • Mandarin orange segments
  • Pineapple chunks
  • Blueberries
  • Added: Avocado slices (instead of chicken)
  • Toasted pecans or walnuts (optional)
  • Poppyseed dressing (check for vegan if using store-bought)

Poppyseed Dressing:

  • 1/4 cup white wine vinegar
  • 2 tablespoons poppy seeds
  • 1 tablespoon Dijon mustard
  • 1/4 cup avocado oil or light olive oil
  • 1–2 fresh orange segments (or 1/4 fresh orange, peeled)
  • Pinch of sea salt
  • 1/2 teaspoon stevia or monk fruit sweetener (optional)

Blend all dressing ingredients in a Vitamix or high-speed blender until smooth and creamy. Adjust sweetness to taste.

Instructions:

  • Layer romaine and iceberg lettuce (or mixed greens) in a large bowl.
  • Top with strawberries, mandarin oranges, pineapple chunks, and fresh blueberries.
  • Add avocado slices.
  • Drizzle with the prepared poppyseed dressing.
  • Serve immediately for a fresh, satisfying meal.
