Strawberry Poppyseed Salad with Avocado – Panera-Inspired (Vegan)
This Strawberry Poppyseed Salad with Avocado is a fresh, vegan twist on a Panera classic. I swapped the chicken for creamy avocado – no extra charge – and it’s still packed with flavor. Perfect for a light, refreshing meal.
Ingredients:
- Romaine
- Iceberg Lettuce
- Strawberries, sliced
- Mandarin orange segments
- Pineapple chunks
- Blueberries
- Added: Avocado slices (instead of chicken)
- Toasted pecans or walnuts (optional)
- Poppyseed dressing (check for vegan if using store-bought)
Poppyseed Dressing:
- 1/4 cup white wine vinegar
- 2 tablespoons poppy seeds
- 1 tablespoon Dijon mustard
- 1/4 cup avocado oil or light olive oil
- 1–2 fresh orange segments (or 1/4 fresh orange, peeled)
- Pinch of sea salt
- 1/2 teaspoon stevia or monk fruit sweetener (optional)
Blend all dressing ingredients in a Vitamix or high-speed blender until smooth and creamy. Adjust sweetness to taste.
Instructions:
- Layer romaine and iceberg lettuce (or mixed greens) in a large bowl.
- Top with strawberries, mandarin oranges, pineapple chunks, and fresh blueberries.
- Add avocado slices.
- Drizzle with the prepared poppyseed dressing.
- Serve immediately for a fresh, satisfying meal.
Panera version: Chicken raised without antibiotics, romaine, mandarin oranges, strawberries, blueberries, and pineapple. Dressing was fat-free poppyseed dressing. Topping was toasted pecan pieces.
