Spiralized Salad – Fresh, Crunchy, and Packed with Flavor

This spiralized salad is a bright, crunchy mix of fresh veggies with a simple, tangy dressing. It’s perfect for a quick lunch or a light side dish, and it’s easy to customize based on what you have on hand.
 
Ingredients:
  • 1 medium Zucchini, spiralized
  • 2-3 Radishes, spiralized
  • 1 Cucumber, spiralized
  • 1 cup Cabbage and Carrot mix (or thinly sliced)
  • 2-3 Green Onions, chopped

 
Dressing:

  • 2-3 Tablespoons Red Wine Vinegar
  • 1-2 teaspoons Dijon Mustard (Trader Joe’s Whole Grain Dijon Mustard is my favorite)
  • Salt and Pepper to taste

 
Instructions:

  • Spiralize the zucchini, radishes, and cucumber.
  • Toss the spiralized veggies with the cabbage and carrot mix.
  • Add the chopped green onions for a bit of extra bite.
  • In a small bowl, whisk together the red wine vinegar and Dijon mustard. Season with salt and pepper.
  • Drizzle the dressing over the salad and toss to combine.
  • Serve immediately or store in the fridge for up to a day.

 
Tips:

  • Add a handful of fresh herbs like parsley or cilantro for extra flavor.
  • Top with seeds or nuts for a bit of crunch.
  • Swap the dressing for a balsamic vinaigrette if you want a different flavor profile.
