
Zesty Mango, Black Bean, and Rice Salad – No Dressing Needed
When Iβm in the mood for something fresh, filling, and full of flavor, this Zesty Mango, Black Bean, and Rice Salad hits the spot. Itβs a quick and easy combo of mixed greens, black beans, rice, and mango salsa β no dressing required! The bright, zesty flavors of the salsa do all the work.

Ingredients:
- Mixed greens (I used a blend, but any leafy greens will work)
- Black beans (rinsed and drained)
- Cooked rice (brown or white β your choice)
- Mango salsa (Whole Foods version includes: mangos, pineapple, jalapeno, cilantro, lemon, lime, red bell peppers)
Instructions:
- Layer your bowl with a generous handful of mixed greens.
- Top with black beans and a scoop of cooked rice.
- Spoon over a generous helping of mango salsa.
- Toss lightly or leave as is β the salsa is the perfect no-fuss dressing!
- Serve immediately or pack it for a fresh, flavorful lunch.
Tips:
- Bulk it up: Add avocado or grilled corn.
- Top it up: Add handful of crushed tortilla chips for some crunch. My favorite is Siete Grain Free Gluten Free Tortilla Chips. Costco carries them.
- Go protein-rich: Add some cooked quinoa or a sprinkle of pepitas for a bit of protein and texture.
- Turn up the heat: If you like it spicy, add a few extra slices of fresh jalapeno.
