Cucumber Watermelon Juice

I juiced a watermelon today. It filled a huge container (Ball jar 64 oz) plus a Quattro Stagioni bottle full. There was some left over – roughly another cup so I made another juice.

This juice is light, hydrating, and refreshing-perfect for anytime you want something that feels restorative without being heavy. The combination of watermelon and cucumber creates a naturally sweet, cooling base, while apple, pear, lemon, spinach, and ginger add depth, brightness, and nutrients.

Nutritional Benefits

Watermelon is over 90% water, making it incredibly hydrating. It’s rich in lycopene, a powerful antioxidant that supports heart health and may protect against oxidative stress. Watermelon also provides vitamins A and C, along with the amino acid citrulline, which supports circulation and muscle recovery.

Apple adds natural sweetness and provides quercetin, an antioxidant with anti-inflammatory properties. Apples contribute vitamin C and potassium, supporting immune function and heart health.

Pear brings a subtle, mellow sweetness and is a good source of fiber (even in juice, some remains), copper, and vitamin K. Pears also provide antioxidants that support digestive health and reduce inflammation.

Lemon adds bright acidity that balances the sweetness of the fruit. It’s high in vitamin C, supports immune function, and helps with iron absorption from the spinach. Lemon also aids digestion and adds a fresh, clean finish to the juice.

English cucumber is hydrating and cooling, with a mild flavor that doesn’t overpower. Cucumbers provide vitamin K, potassium, and antioxidants like beta-carotene and flavonoids. They also have anti-inflammatory properties and support healthy skin.

Spinach delivers iron, folate, magnesium, and vitamins A, C, and K. It’s packed with chlorophyll and antioxidants that support energy production, bone health, and overall vitality. Spinach blends seamlessly into this juice without adding bitterness.

Ginger aids digestion, reduces inflammation, and adds a subtle warmth that complements the cooling fruits and vegetables. It also supports immune function and adds a gentle spice that keeps the juice from feeling one-dimensional.

Why I Like This Juice

This juice pairs hydrating fruits and vegetables with nutrient-dense greens to create a light but nourishing drink. Watermelon and cucumber form a refreshing base, while apple and pear add balanced sweetness. Spinach quietly boosts nutrition, and ginger adds warmth and digestive support.

Together, these ingredients create a juice that’s refreshing, restorative, and easy to enjoy, especially after activity or when you want something light but nourishing.
