Acai Green Smoothie Bowl

I enjoy having smoothies. Really, I do. But there’s something fun about having a smoothie bowl. Maybe it’s because it is thicker than a smoothie, more like an entree. Maybe because you can be creative and make half your smoothie bowl with one kind of base and the other half another kind and layer it in your bowl to make it more visually intriguing. However, I think it is the toppings that make it fun! The other day I made a smoothie so thick that I decided it needed to be turned into a smoothie bowl. I was checking my supplies to see what I could use for a topping. I recently purchased coconut strips so of course those had to go on. Fresh blueberries – absolutely. I didn’t have anything for a heartier crunch except almonds. I wasn’t about to try to slice them myself so I just added them as they were – whole. I enjoyed that smoothie bowl so much that I wondered what else could I turn into a smoothie bowl. So, for the next 30 days, I’ll be exploring the world of smoothie bowls.

Yesterday I made another smoothie bowl but it was so big that I shared it with my neighbor.

Acai Green Smoothie Bowl

Base:

1 unsweetened acai packet by Sambazon
1 1/2 frozen bananas
2-3 serving spoonfuls of cashew yogurt with coconut cream by Trader Joe’s
Handful of spinach
1 scoop Sunwarrior Vegan Collagen Building Powder Protein Peptides in Chocolate Fudge flavor
Chia seeds

Toppings:

Frozen strawberries, blackberries, raspberries, and blueberries
Coconut strips

Thoughts on this smoothie bowl:

I used too much spinach, and it made the color unappealing. I used too much Sunwarrior Vegan Collagen Building Powder Protein Peptides, banana, and chia seeds as they all made it too thick. This was my first time working with acai. I’m not acquainted with the ingredient and its characteristics, so it was a fun experiment. Even though it was a thick smoothie bowl, it tasted really good.

      Have you made smoothie bowls before? What is your favorite? I was at Fresh Thyme the other day and looked in their bulk section to see if there were some toppings I could buy just a small amount of. I found toppings I do enjoy at Aldi and Trader Joe’s. Both places were in my budget.

    There are quite a few smoothie bowl ideas on the website forks over knives. I love them. Unfil I got bored with the bananas all the time I didn’t even think there were other options – The recipes you suggested are delightful.

      I haven’t been to the Forks Over Knives website in a while. I didn’t know they had smoothie bowl ideas. I definitely understand the want to use different ingredients. My shopping list for what I’d like to do with this challenge is a challenge in and of itself to try to keep it within a budget that works best for me.

I agree with Tamara on the berries, they really add incredible beauty to the bowl.       Absolute win Kimberly! I’ve made banana nice cream before and that was a fun experience. The great thing about smoothie bowls is you don’t have to wait to eat it like you do with nice creams. I’m glad you’re along for the ride!

      Years ago when I bought my Vitamix, I was so scared to use it. It took me years before I opened it and took it out of the box. I stalked the demonstrators at Costco and Whole Foods to watch and learn. I have no issues vitamixing now but I do wish Costco would bring back the Vitamix demonstrations. I have to work with acai more before I feel more comfortable with it. I really like the taste.

    I like the idea of a (smoothie) bowl, and here’s why:
    First of all it looks so nice, love the frozen berries!
    I think by leaving the individual ingredients as they come, you get to taste them better. Also you get more of the fiber, which is good for your digestion.

      By the time I was ready to sit down to eat, you know after photos lol!, the berries were thawing out and it was so nice! I thought about putting chia seeds as a topping but it is better for me to have it in with the base all ground up. Chia seeds are great for internal brushing.
