Berry Beet Smoothie Bowl
3 cups spinach, kale, and chard
1 beet
1 cup frozen Aldi’s cherry berry blend of dark sweet cherries, tart cherries, strawberries, and blueberries
2 1/2 cups frozen pineapple
3 Tablespoons chia seeds
1 scoop SunWarrior Vanilla Protein Powder
2-3″ ginger
handful of fresh mint
I thought I was going to use rosemary but I chewed a piece and it was so spicy! This is an herb I want to play with more to see what flavor combos I like.
Toppings are freeze-dried strawberries, dried cherries, sliced almonds, and coconut flakes
I had some for lunch and had extra so I could bring it to work for dinner. I just used ice packs in my crew cooler and that kept it nice and cold.
I wanted to make this smoothie base without banana or mango. With such a lovely deep red color, you wouldn’t know I had 3 cups of greens in there unless I told you.

Awesome Stacey! Let me know how you like yours! I think the pineapple brought out more of the sweeter side of the beet. I only did a cup of the cherry berry mix because that finished the bag, Lol!

Looks tasty! I’ve never thought to use beets in a smoothie – usually I roast them if we eat them. Thank you for sharing this recipe.

Hi Ronda, I love beets! I’ve done beet juice before, and it is so good! I have not yet, at least I don’t think I have, tried beet noodles. I used Trader Joe’s fruit and veggie wash and also used a vegetable scrub brush on the beet before chopping and putting in the Vitamix.
I do love roasted beets!!
