Chocolate Mint Green Smoothie Bowl
I love fresh mint. I actually wanted to make watermelon juice with mint but when I got to the middle part of the watermelon, it looked odd and tasted funny. I thought it was just best to throw it out. Disappointing yes, but then I had to think what else I wanted to use my mint for. I made Lemon Blueberry Mint Infused Water last month and will do so again to take to work today. But I still needed to have breakfast. I made a Chocolate Mint Green Smoothie Bowl.
2 cups spinach, kale, and chard
1 banana, frozen
1 1/2 cups strawberries, blueberries, raspberries, and blackberries – this is Aldi’s frozen Berry Medley
1/2 cup cauliflower, frozen
2-inches ginger
3 Tablespoons chia seeds
1/2 cup coconut cream to start with, then added 1/4 cup more
1/2 Tablespoons cacao powder
fresh mint leaves – I didn’t measure, I just washed a sprig of mint that I bought from the farmer’s market the other day and pulled all the leaves off except the top which I used as a garnish (an edible garnish). The sprig of mint is bigger and looked nicer than any I’ve seen at Kroger. Like what mint should look like.

You don’t taste the cauliflower at all in this recipe. The berries brought out the chocolate flavor.
Toppings: blueberries, raspberries, and blackberries, coconut flakes, Carlo’s Grain Free Blueberry Walnut Granola, sprinkle of cacao powder, top of the mint sprig
With the size bowl I used, this will make 2 smoothie bowls. I’ll be taking one into work tonight for lunch/dinner.

What a delightful recipe! I’m usually not a big fan of mint, but your Chocolate Mint Green Smoothie Bowl looks so tempting that I might just give it a try! I’m thinking of making it without the mint—do you think it would still taste as amazing? The combination of berries and chocolate sounds divine, and I love the idea of adding a scoop of protein powder. Thanks for sharing such a creative and healthy breakfast idea!

Yes, I think it would taste great without the mint. Berries, I think, enhance the richness of chocolate & cacao. I’ve done a few drinkable smoothies using chocolate or cacao and berries and had enjoyed them. I was a bit worried when I made it due to the protein powder I used has a chocolate fudge flavor. I thought it might be too chocolately. But even with the cacao sprinkled on top – and only 1/2 teaspoon within the base, it wasn’t too much. Maybe if you make it without the mint, scale a bit back on the chocolate? Like, not put in the cacao in the base, just use the protein powder. Save the cacao for topping. Let me know what you choose to do, I can’t wait to hear about it!

I do hope you get to try this smoothie bowl! I used to include both ginger and turmeric in quite a few of my smoothies.
