Creamy Rice Pudding

Instructions
 

  • Cook 1/2 cup rice in 2 cups milk in top of double boiler until rice is tender, about 1/2 hour. Add 1/4 cup butter.
  • Beat 3 eggs, add 3/4 cup sugar, 1 teaspoon vanilla and 2 cups milk. Add hot rice mixture. Mix well.
  • Pour into greased baking dish. Sprinkle with 1/2 teaspoon nutmeg.
  • Bake at 350ºF for 50 minutes.
  • Cool and serve.
