Creamy Rice Pudding
Instructions
- Cook 1/2 cup rice in 2 cups milk in top of double boiler until rice is tender, about 1/2 hour. Add 1/4 cup butter.
- Beat 3 eggs, add 3/4 cup sugar, 1 teaspoon vanilla and 2 cups milk. Add hot rice mixture. Mix well.
- Pour into greased baking dish. Sprinkle with 1/2 teaspoon nutmeg.
- Bake at 350ºF for 50 minutes.
- Cool and serve.
