Purple Sweet Potato Blueberry Smoothie Bowl

Smoothie Bowl Base Ingredients:

  • 1 cup frozen purple sweet potato. Start with 1/2 cup if you’re new to using it. It makes the smoothie very thick.
  • 1 frozen banana
  • 1 cup frozen blueberries
  • 1/2 tsp turmeric powder
  • 1/2 tsp beet root powder
  • 1/2 cup water, adjust as needed for blending

Instructions:

  • Add all base ingredients in your Vitamix or other high-speed blender.
  • Blend until smooth and creamy, adding more water if needed for desired consistency.
  • Pour into a bowl.

Toppings:

  • Coconut chips
  • Pumpkin seeds
  • Cinnamon (light sprinkle)
