Spinach Lasagna
Spinach Lasagna
Ingredients
- 1 lb Monterey Jack cheese (grated)
- 8 oz lasagna noodles (cooked)
- 3 packages spinach frozen chopped (cooked and drained)
- 1 cup parmesan cheese (grated)
- 2 lbs cottage cheese
- 2 eggs
- 1 Tablespoon parsley
- 1/2 cup butter soft
- salt and pepper to taste
Instructions
- Mix cottage cheese, seasonings, eggs, and butter.
- Grease a lasagna pan.
- Place a layer of noodles in pan followed by a layer of cottage cheese, Monterey Jack cheese, spinach, parmesan.
- Repeat layers
- Bake at 350 degrees for 30 minutes (uncovered?)
