Tropical Sunshine Smoothie Bowl

Today, I made a quick trip to the grocery store after running out of greens. I snagged a 16 oz container of spinach and kale blend on clearance for just $3.17, with an expiration date of two days away. I also found two bananas on clearance for a mere 27 cents and grabbed 3 packs of baby arugula priced at $1.58 each. Since the containers had varying expiration dates, I opted for the one expiring furthest out, which was August 3, and bought them all.

I’m a big fan of arugula, though I usually reserve it for salads due to its peppery taste. While it’s not typically used in smoothies, I’ve been enjoying it lately in salads with fattoush dressing, sliced almonds, and nutritional yeast flakes. An excellent salad dressing is Dr. G’s Salad Dressing https://www.youtube.com/watch?v=_abB1YwPwCI It is simple to make and is delicious and nutritious.

Ingredients:
2 cups frozen mango
2 cups frozen pineapple
1 cup spinach and kale blend
1 orange peeled
1 lemon peeled
1 1/2″-2″ ginger
2 1/2 Tablespoons chia seeds – Mayorga Organic Raw Chia Seeds
1 1/2 scoops vanilla protein powder – SunWarrior Warrior Blend Vanilla Protein Powder
1/4 cup almond milk
Toppings:
fresh banana sliced
freeze-dried mango cut into smaller bites – Trader Joe’s Freeze-Dried Mango
sliced almonds – Trader Joe’s Slivered Almonds Unsalted Dry Toasted
coconut chips – Trader Joe’s Unsweetened Coconut Chips
Carlo’s Grain Free Gluten-Free Blueberry Walnut Granola
coconut flakes – Let’s Do Organic Unsweetened Shredded Coconut

    Oh… another yummy recipe from you. Curious, can I make this without Kale and spinach? Not a fan of their high oxalates. Although I do love pineapple and mango!

      Hi Katrina! I’m glad you’ve enjoyed the recipes. For a lower-oxalate version, you could substitute the spinach/kale blend with chard, or romaine, or green leaf lettuce. Swap out the chia seeds for flax seeds and skip the sliced almonds in the topping. When selecting your granola, be sure to check the ingredient list. Coconut milk is a great alternative to almond milk. Thank you for following along and for your kind words!

      It was so good! I texted my neighbor after I had my first bite. Didn’t see his reply until like 45 minutes later. I was too busy eating my smoothie bowl. He really enjoyed it as well. This was quite refreshing. The orange, lemon, and ginger were definitely something I think I needed. I tried to get a better picture in the sunlight, but I was afraid I would drop my bowl and it would land on the downstairs neighbor.
