Panera-Inspired Seasonal Greens Salad with Avocado & Arugula
If you loved the Seasonal Greens Salad from Panera, you might have noticed it’s not currently on the menu. But don’t worry – you can recreate this fresh, crisp favorite at home with a few simple ingredients. I’ve even added a couple of upgrades to make it even more satisfying.
Ingredients:
- Mixed greens (baby kale, spinach, romaine, leaf lettuce, or spring mix)
- Added: Arugula
- Cucumber, chopped
- Tomato (vine-ripened or Roma), cut into chunks
- Added: Avocado slices
- Balsamic vinaigrette
- Optional: Red onions (I skipped these)
Instructions:
- Start with a generous base of mixed greens and arugula.
- Top with chopped cucumber and tomato chunks.
- Add a few creamy avocado slices.
- Drizzle with balsamic vinaigrette.
- Serve immediately for a fresh, satisfying salad.
Tips:
Upgrade the crunch: Add a handful of toasted nuts, seeds, or gluten-free croutons.
Make it a meal: Add more protein like grilled chicken, chickpeas, or roasted chickpeas. You can also add more avocado.
Keep it fresh: Use a high-quality balsamic for the best flavor.
Panera Version: Made with arugula, romaine, kale, and radicchio along with vine-ripened tomatoes, red onions, and cucumbers all tossed in a reduced-fat balsamic vinaigrette.
