Mango Pineapple Cauliflower Green Smoothie Bowl

Cauliflower appears to be a perfect addition to my smoothie bowl, complimenting the spinach, kale, and chard that I already use. Alongside these fresh greens, I’ve incorporated frozen cauliflower for an extra nutrient boost. To add a tropical flair, I’ve included frozen mango and pineapple. For a refreshing zing, I’ve infused the blend with ginger and lemon.

Ingredients
  

  • 3 cups spinach, kale, and chard (I used Earthbound Farms Power Greens)
  • 1 1/4 cup mango (frozen)
  • 1 1/4 cup pineapple (frozen)
  • 1 1/2 cup cauliflower (frozen)
  • 1 lemon
  • 1 thumb ginger
  • 1 cup almond milk
  • 3 Tablespoons chia seeds

Toppings

  • frozen mango
  • frozen pineapple
  • sliced almonds
  • coconut flakes

Instructions
 

  • I packed in the fresh greens first, then the frozen fruit and vegetables. Next was lemon, ginger, and chia seeds. I started by using 1/2 cup of almond milk first, then slowly added the other half to reach the consistency I wanted.
  • After I arranged the toppings, it was ready to eat.

Notes

Maybe I should rename this the Tropicauliflower Smoothie Bowl?

      I love green smoothies! The amount of greens you can get in to your smoothie and with just a small bit of frozen fruit – you do not feel like you are eating grass and dirt (a comment from a co-worker). I love them in a smoothie bowl because you can change up your toppings and not have the exact same every time. I do hope you get the chance to make one soon!
