Pumpkin Smoothie Bowl

3 cups spinach, kale, and chard
1/4 cup frozen mango
1-1 1/2 cups frozen cauliflower
1/2 cup frozen purple sweet potato
3 Tablespoons chia seeds
1 Tablespoon peanut butter powder
1/2 teaspoon pumpkin pie spice
1 scoop (25 grams) SunWarrior Vanilla Protein Powder
2/3 cup canned pumpkin
3/4 cup almond milk – I started out with 1/2 cup and when it looked like it needed another 1/4 cup only then did I add that
I added about another cup of frozen mango as the smoothie base tasted chunky, not smooth and creamy.
Toppings: 1/2 Fuji apple cut up, freeze-dried apples, slice almonds, almond butter drizzle, cinnamon was sprinkled on top
Thoughts: While it tasted of pumpkin, I think I added too many greens to this. I probably could have left out the peanut butter powder, but it did add to the thickness of the smoothie base. I thought the purple sweet potato would bring a nice, sweet earthiness to the smoothie bowl, but I think that’s what made it chunky to where I added more frozen mango and almond milk.

Would I try this one again? Yes, but with quite a bit of modifications. Did I finish my smoothie bowl lunch? Yes, and it was not horrible. It just wasn’t what I was going for.

    I’ve been looking for more ideas for smoothi bowls. This sounds good but not sure if I would put peanut butterin it. Thanks for the recipes.

      If you haven’t had the combination before, it might sound strange. I’ve done drinkable smoothies with peanut butter powder before in them. I love peanut butter. But what started me on this one was the apple chips. When I saw those available at Trader Joe’s, I knew I had something to go with my canned pumpkin. This was definitely more a fall smoothie bowl than a summer smoothie bowl but as I’m doing the https://www.facebook.com/groups/UltimateBlogChallenge this month, I wanted to stretch my learning of smoothie bowls. Peanut butter, or almond butter, and apples are always a great snack idea and I thought these would be a fun topping. I hope whichever you choose, Martha, you have fun and enjoy your smoothie bowls!
